Findings include: Observation on 10/23/19 while doing the initial inspection of the kitchen with Staff [NAME] (Director of Food Services) revealed that the high temperature dish machine failed to reach its max temperature of 180 degrees. Staff [NAME] ran the dish machine 5 times and the gauge never reached over 165 degrees. On review of the months temperature logs it revealed several days where the dish machine failed to reach its minimum temperature of 180 degrees. Interview on 10/23/19 at approximately 9:30 a.m. with Staff [NAME] confirmed the findings and provided the temperature logs to surveyor. Staff [NAME] contacted the vendor who came to the facility validating that the gauge was broken but the dish machine was running to temperature. The vendor provided a 160 degrees T test strip that tests the dish surface not the water temperature. The test result reflected that the dish machine is running at 180 degrees. | 2020-09-01 |
